Method
 

Step 1 – Prepare the Chips
  1. Peel the potatoes and cut them into thick fries. Rinse them in cold water to remove excess starch.
Step 2 – Soak the Potatoes
  1. Soak the cut potatoes in cold water for 20–30 minutes. This helps make the chips crispier.
Step 3 – Make the Batter
  1. In a bowl mix flour, baking powder, salt, and pepper. Slowly whisk in cold sparkling water or beer until you get a smooth batter.
Step 4 – Heat the Oil
  1. Heat vegetable oil in a deep fryer or heavy pan to 350°F (180°C).
