Ingredients
  

  • 2 cups fresh corn kernels or frozen, thawed
  • 2 tablespoons butter
  • 1/3 cup mayonnaise
  • 1/4 cup Mexican crema or sour cream
  • 1/2 cup crumbled Cotija cheese
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1 tablespoon chopped fresh cilantro
  • Salt to taste
  • Hot sauce optional

  2. Melt butter in a saucepan over medium heat. Add corn and cook for 5–7 minutes until tender and slightly golden.

  4. Transfer warm corn to a mixing bowl.

  6. Stir in mayonnaise, crema, lime juice, chili powder, paprika, and salt. Mix well.

  8. Spoon the mixture evenly into serving cups.

  10. Top each elote en vaso with crumbled Cotija cheese, cilantro, extra chili powder, and hot sauce if desired.

Notes

For authentic flavor, use Cotija cheese and fresh lime juice. You can also add Tajín seasoning for extra tanginess. This elote en vaso tastes best served warm but can also be enjoyed at room temperature.
